Creamy Polenta and Peppers
Ingredients
- 1 cup yellow corn polenta
- 2 cups water
- 2 cups milk of choice
- 1 teaspoon salt + 1 teaspoon salt (divided)
- 3 bell peppers, julienned
- 1/2 white onion, julienned
- 1 tablespoon olive oil
- 1 teaspoon pepper
Directions
- Bring water, milk, and 1 teaspoon of salt to a boil in a medium pot. Whisk in polenta and reduce heat and cook for 30 minutes,
- In the meantime, julienne the bell peppers and onions. In a medium-sized skillet, heat olive oil. Add peppers and onions and cook until soft, stirring occasionally. Add 1 teaspoon of salt and pepper.
- Once polenta is done cooking, move mixture to a plate and top the polenta with the pepper mixture.
