Chocolate Pomegranate Bark

Looking for an easy dessert to put together for the holidays? I got you! This three ingredient pomegranate chocolate bark only takes a few minutes to put together and a few hours in the fridge to chill. Not to mention, dark chocolate is an excellent source of magnesium and polyphenols! Magnesium can help to improve sleep, maintain healthy bones, and may help to reduce stress and improve symptoms of anxiety and depression. Polyphenols are antioxidants that lower cortisol (a stress hormone) in the body. Basically, if you’re feeling stressed, have some dark chocolate. 😉

Pomegranates are also rich in polyphenols and anti-cancer phytonutrients. They’ve been linked to reduce inflammation, elevate endurance, and offer digestive, urinary, and cardiovascular benefits. They’re also delicious and make any dish look pretty!

Storing this recipe is pretty easy too! I keep it in a glass tupperware container in the freezer and grab a piece whenever I’m in the mood for something sweet. You can store it in the freezer for up to a year, although, I doubt it will last that long. You can also add some pistachios to add a little more color too. Chocolate Pomegranate Bark

Ingredients

  • 16 oz (2 cups) dark chocolate
  • 1 cup pomegranate seeds
  • 1 tbsp coconut oil

Directions

  1. Add chocolate and coconut oil to a medium-sized microwave safe bowl. Heat for 30 second intervals until chocolate and coconut oil is melted, stirring in between to prevent burning.
  2. Once the chocolate is fully melted, spread onto a cookie sheet to your desired thickness. Sprinkle pomegranate seeds onto chocolate evenly throughout.
  3. Chill the bark in the freezer for at least 4 hours or overnight. Once the bark is solid, break into small pieces (about 1-2 inches thick).
  4. Store the bark in the freezer for up to 1 year. Enjoy!
